Hi girls!
Some of you asked if we could share summer recipes on this blog. Sounds like a great idea to me. I had completely forgotten about this request until last night. My daughter-in-law, Jen, fixed a wonderful salad last night, and I will share her recipe with you today. I am always looking for new recipes so please don't be shy about giving your thoughts and ideas on how to feed our selves and hungry families during these hot and humid (depending where you are) days and nights!!!!

Jen's Summer Greek Salad

1 head romaine lettuce, chopped
4 whole ripe tomatoes, cut into six wedges, then cut in half
1 cucumber, peeled, cut in fourths lengthwise and diced into large chunks
1/2 whole red onion, sliced very thin
30 whole pitted Kalamata olives, cut in half lengthwise
6 ounces crumbled Feta cheese
Fresh parsley, roughly chopped (Jen did not add this)
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar (to taste)
1 clove garlic, minced
6 whole Kalamata olives (extra), chopped fine
1/4 teaspoon salt
Freshly ground pepper
1 whole lemon, for squeezing
Preparation instructions:
Add chopped lettuce, tomato wedges, cucumbers, onion slices, halved Kalamata olives, half Feta cheese and parsley in a large bowl.
Combine olive oil, vinegar, sugar, garlic, salt, pepper, and chopped olives in a bowl. Whisk together until combined. Taste and adjust seasonings. Pour dressing over salad. Toss with tongs and crumble remaining Feta cheese over top of salad. Delicious!!!!
Jen added two bags of already grilled chicken strips to make an entire meal. I think in the past she has added left over grilled beef, sliced thin.
